100% GUILT FREE Zucchini/Banana nut bread!



This bread is so freaking delicious that I have made it three times this week! Normally I would feel bad about that... but it's 100% guilt free! Don't believe me?! Check the ingredients!

Ingredients I began with.... then I added a few more things as I started playing.
These are the walnuts and raisins I like to use.
Zucchini from my garden and matchstick carrots


Preheat oven to 375.

2 cups oatmeal flour (I just blend two cups of oatmeal into flour).
1c grated zucchini
1c grated carrots (I buy 'matchstick' carrots instead)
1/2 c vanilla greek yogurt
1/2 organic applesauce
2 eggs
2 mashed ripe bananas (I use my hands to mash, one less dish to wash).
1/2 tsp baking soda
1/2 tsp baking powder
1c chopped walnuts
1c golden raisins

I used my blender to blend regular oats into Oat flour.
Stir all ingredients together well.

Grease 9in baking dish or bread pan.

Bake for 45 minutes.

Let cool 1 hour before removing from pan.

Serve with <3 love <3
So delicious.

Everyone needs a Cheerleader!


      When I began my fitness journey (or started over because let's face it, I've quit about a million times before it actually stuck) I thought I was perfectly capable of doing it all on my own. Why not? As a former personal trainer who worked in several gyms throughout the years, I had the knowledge I needed to design my own workouts AND eat to fuel my body properly.

    It wasn't until I actually tried doing it alone that I realized how much I would try and talk myself OUT OF working out and eating right! I had great support from my husband and friends- it was ME that was the problem! I knew I wanted to make the change, and I know HOW to make the change.... but actually doing it was the major hurdle.



    Having the guidance, support, and motivation from my Beachbody coach was EXACTLY what I needed to re-ignite my fire for fitness. No one can stop me now!!
